Goldenrod - Eggs 'a la Goldenrod

Creamed eggs on toast

Ingredients

  • 2 tbsp butter
  • 2 tbsp flour
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 cup milk
  • 4 hard boiled eggs (remove yolks and save for topping)

Preparation

Step 1

Medium white sauce
Melt butter over low heat in a heavy saucepan. Wooden spoon for stirring is a help.
Blend in flour, seasonings.
Cook over low heat stirring until micture is smooth and bubbly.
Remove from heat. Stir in milk. Bring to a boil, stirring constantly. Boil for 1 min

Remove yolks from eggs grate and save for topping
Chop white portions of eggs and fold into hot white sauce.

Serve over hot buttered toast

Sprinkle grated yolk on top
