SMOKY CORN CHOWDER WITH BACON

This is easy to make.. and very tasty!!

Ingredients

  • 6 slices chopped bacon
  • 1 leek, white part only - chopped finely
  • 1 potatoe - finely chopped
  • 2 cups corn (frozen or canned)
  • 1 1/2 cups chicken broth
  • 1 1/2 cups milk
  • 398 ml can creamed corn
  • 1/2 tsp thyme
  • 1 bay leaf

Preparation

Step 1

Cook bacon till crisp. Reserve 1 tbsp fat. Add leak and saute 1 mnute. Add potatoe, corn, broth, milk, creamed corn and spcies. Bring to a boil and then reduce to simmer. Cook uncovered till potatoes are tender - about 20 minutes. Season with fresh pepper.
