Ingredients
- 6 slices chopped bacon
- 1 leek, white part only - chopped finely
- 1 potatoe - finely chopped
- 2 cups corn (frozen or canned)
- 1 1/2 cups chicken broth
- 1 1/2 cups milk
- 398 ml can creamed corn
- 1/2 tsp thyme
- 1 bay leaf
Preparation
Step 1
Cook bacon till crisp. Reserve 1 tbsp fat. Add leak and saute 1 mnute. Add potatoe, corn, broth, milk, creamed corn and spcies. Bring to a boil and then reduce to simmer. Cook uncovered till potatoes are tender - about 20 minutes. Season with fresh pepper.
