Ingredients
- Optional Additions:
- 2 tablespoons oil
- 2 onions, diced
- 6 oz. Goya red sofrito
- 6 cloves garlic, minced
- 2 bay leaves
- 1/2 tsp. oregano
- 8 oz. tomato sauce
- 2 cans Goya gandules, partially rinsed
- black pepper, to taste
- salt, to taste
- Spanish olives, as much as desired
- 2 packets Goya sazon con culantro y achoite (coriader and annatto)
- 1/2 tsp. Goya Sazonador Total (total seasoning)
- 4 1/2 cups water
- 4 cups rice, rinsed
- 1 bunch cilantro, coarsely chopped
- Pork,diced--Chicken, diced--Bacon, diced and cooked and drained--Ground beef, cooked and drained
- Substitute canned kidney beans or black beans instead of gandules if desired

Preparation
Step 1
Heat oil in large sauce pot. Add onions, sofrito, garlic. Saute a few minutes until onions are soft. Stir in remaining ingredients. Cover and cook on medium-low for about 25 minutes until all liquid is absorbed. Stir every 5 to 10 minutes. Add more salt if needed.
