Ingredients

  • Optional Additions:
  • 2 tablespoons oil
  • 2 onions, diced
  • 6 oz. Goya red sofrito
  • 6 cloves garlic, minced
  • 2 bay leaves
  • 1/2 tsp. oregano
  • 8 oz. tomato sauce
  • 2 cans Goya gandules, partially rinsed
  • black pepper, to taste
  • salt, to taste
  • Spanish olives, as much as desired
  • 2 packets Goya sazon con culantro y achoite (coriader and annatto)
  • 1/2 tsp. Goya Sazonador Total (total seasoning)
  • 4 1/2 cups water
  • 4 cups rice, rinsed
  • 1 bunch cilantro, coarsely chopped
  • Pork,diced--Chicken, diced--Bacon, diced and cooked and drained--Ground beef, cooked and drained
  • Substitute canned kidney beans or black beans instead of gandules if desired

Preparation

Step 1

Heat oil in large sauce pot. Add onions, sofrito, garlic. Saute a few minutes until onions are soft. Stir in remaining ingredients. Cover and cook on medium-low for about 25 minutes until all liquid is absorbed. Stir every 5 to 10 minutes. Add more salt if needed.
