  • 1 egg white
  • 1 tsp vanilla
  • 3 cups whole almonds
  • 1/2 cup brown sugar
  • 1/2 tsp salt
  • 1 tsp ground cinnamon

Step 1

1. Preheat oven to 250 degrees F. Lightly grease a cookie sheet or line with non-stick foil.

2. Lightly beat the egg white in a large mixing bowl; add vanilla and beat until frothy, but not stiff. Add the nuts and stir until well coated. Mix the cinnamon, salt and sugar in a small bowl and sprinkle over the nuts. Stir to coat and spread evenly on the prepared pan.

3. Bake for one hour in preheated oven, stirring every 10 minutes, until golden, or to desired doneness. Allow to cool completely, then store in airtight containers.
