My Father's Cinnamon Rolls

Thanks to Matthew and Stephanie for sending in their father's recipe for cinnamon rolls.
Ingredients
- DOUGH:
- 2 packages yeast
- 1 teaspoon sugar
- 1 cup warm (not hot) water
- 1 can evaporated milk at room temperature
- 2/3 cup melted butter
- 3/4 cup sugar
- 4 teaspoons salt
- 6-8 cups flour
- Butter
- Raisins
- Cinnamon-sugar mix
- Brown sugar

- CREAM CHEESE FROSTING:
- 1 box powdered sugar
- Evaporated milk
- 1/2 cup butter, melted
- 1 8-ounce package of cream cheese, softened
Preparation
Step 1
DOUGH:
Mix the first three ingredients. Add the next five ingredients to make dough. Let it stand for 10 - 15 minutes. Turn the dough onto floured surface and knead vigorously by hand or use a dough hook, until smooth and elastic. Slap the dough on a counter or table surface several times to remove air bubbles. Place in a large greased bowl, grease the top, and place in a warm (not hot!) oven for an hour. On floured surface, roll out dough in the shape of a rectangle. Spread liberally with butter (it does not have to be melted). Sprinkle with raisins and lots of cinnamon-sugar mix and a little brown sugar. Roll up and slice into 11/2" inch slices. Heat oven to 400 degrees F and then down to 350 degrees F and bake for 15 - 20 minutes. When rolls are done, frost immediately with cream cheese frosting.

CREAM CHEESE FROSTING:
With an electric mixer, combine all of the powdered sugar and melted butter and enough milk to make a stiff frosting. Add softened cream cheese and mix on high for 1 minute. Then add more milk for preferred consistency.

I have a mixed history with yeast doughs, part of which I blame on the climate in Seattle, but now in LA I have less excuses, just a couple of weeks ago I made a different recipe for hockey-pucks, very dissapointing, but as soon as I got my hands into this dough-blob I knew it was going to be a good day. This recipe is spectacular - THANK YOU !! very rarely do I find a good basic recipe that I know will be my gold standard for life. I am so happy that you shared it. Really I took pictures!!!!!!
I tried this recipe among others and i agree it has a very unique flovor. I am on my second round of making them again, I wont share as many this time!
Very best cinnamon rolls ever! I tried this recipe myself and these rolls were to die for. I strongly recommend them. Easy to make and just simply delicious.
The best! This recipe is wonderful all I do different is I added 1 tsp. allspice to the recipe. Also I make it the night before and let it do the last rise in the refrigerator. In the morning I take them out and let it sit for about 30 minutes and pop it in the oven;. The consistency of these cinnamon rolls are perfect and the cream cheese frosting is the best. I’ve been making them for Christmas morning for several years now and they have become a tradition. They are so good I have carried the tradition on to New Years Day; it's a wonderful way to start the new year!
