Cream Pasticcera

Ingredients

  • 175 grams sugar
  • 5 egg yolks
  • 70 grams flour
  • 450 grams milk
  • 4 tbs. kirsch, rum, or cognac
  • 100 grasm finely chopped amaretti or almonds

Preparation

Step 1

Beat the sugar into the egg yolks until ight and pale, then beat in the flour. Bring the milk to a boil and pour onto the egg mix slowly. Beat vigorously until blended. Pour mixture into a heavy bottomed pan and bring to a boil, stirring constantly. Simmer for 3 minutes longer, stirring occasionally so that the cream does not burn on the bottom.

Stir in the almonds or macaroons and let the custard cool before using
