Pork Chops with Sweet Potato & Crisps

Ingredients

  • 4 large sweet potatoes, peeled
  • 3 large pears, peeled, cored, and chopped
  • 1/3 cup pecans, toasted
  • 1/3 cup brown sugar, packed
  • 1/2 cup + 2T flour divded
  • 3 T butter, melted
  • 2 T oil
  • 2 eggs, beaten
  • 1 cup seasoned breadcrumbs
  • 4 thick cuts pork chops

Step 1

Preheat oven to 350. In a large stockpot, bring water to a boil. Add whole sweet potatoes and boil for 6 to 8 minutes. Drain potatoes, cut into wedges and set aside. In an 8x8 inch baking dish, alternately place potatoes and pears. In a small mixing bowl, combine pecans, sugar, 2 T flour and butter; crumble mixture over sweet potatoes and pears; set aside. Heat oil in a large saute pan over medium-high heat. Place eggs in a wide shallow bowl; place remainng 1/2 cup flour on a plate and place breadcrumbs on a separate plate. Coat each pork chop first in flour, then in eggs and finally in breadcrumbs. Place chops in saute pan, reduce heat to medium and sear for 3 to 4 minutes or unitl golden brown. Place seared pork chops in a greased 9x13 inch baking dish. Transfer both sweet potato and pear crisps and pork chops to oven. Bake for 20 minutes then remove from oven and allow both dishes to rest 5 minutes before serving. To serve, place sweet potatoe and pear crisps over pork chops.
