Pineapple Upside Down Mini's

  • 2 cans 20 oz each, pineapple slices
  • 1/3 cup butter melted
  • 2/3 cup brown sugar
  • 9 maraschino cherries halved
  • 1 pkg 18.25oz yellow or pineapple flavored cake mix


Servings 18


Step 1

Preheat oven to 350.
Coat 18 muffin cups with spray.
Drain pineapple, reserving juice, reserve 2 slices for another use. Combine butter and sugar. Evenly divide sugar mixture amoung muffin cups. Press pineapple slices in cups. Place 1 cherry half in center of slices. Prepare cake mix according to pkg, replacing water with reserved juice. Pour 1/3 cup batter into each muffin cup. Bake 20-25 minutes. Cool 5 minutes, invert onto platter.
