Ingredients
- 4 cups old-fashioned oats (not quick cooking)
- 1 cup sliced almonds
- 1/2 cup shredded coconut - preferrably unsweetened
- 1/4 cup salted pepitas or sunflower seeds
- 1/2 cup per maple syrup
- 2 tbsp canola oil
- 11/4 tsp. ground cinnamon
- 1/2 tsp. kosher salt
- 1 cup dried cherries or cranberries, raisins, currants
- 1/2 cup packed brown sugar optional
Preparation
Step 1
Preheat oven to 375°. Line a
baking sheet with parchment
paper or coat with nonstick spray.
Toast oats, almonds, cinnamon,
and salt together in a large skillet
until fragrant, 7-8 minutes.
Combine cherries, coconut,
and brown sugar in a large bowl;
add toasted oat mixture.
Stir syrup into oat mixture
to combine.
Spread granola onto prepared
baking sheet; bake 18 minutes,
stirring halfway through baking.
Serve with yogurt, if desired.
Makes 12 servings (6 cups)
