Roast Tomato and Ricotta Brushetta

Ingredients

  • 1 baguette
  • olive oil
  • fresh ricotta
  • roasted grape tomatoes (from recipe)

Preparation

Step 1

Cut baguette into even slices about an inch thick. Brush with olive oil and grill or broil until toasted. Top with about a tablespoon of fresh ricotta. Sprinkle with a good finishing salt, such as a gray salt and pile high with roasted tomatoes as a quick appetizer or lunch.
