African Peanut Soup

With it's incredible flavor and bit of heat, this has become my most favorite soup ever! If you enjoy the flavors of curry this recipe is a must try! (This recipe has been adapted from both a post by Kathy at Wives with Knives and a publication in the Winnipeg Free Press.)

Ingredients

  • 1 1/2 cups diced cooked chicken
  • 1 cup diced onion
  • 4 cloves garlic, minced
  • 3 Tbsp. sesame oil
  • 1 Tbsp. curry powder
  • 3/4 tsp. salt
  • 3/4 tsp. pepper
  • 1/2 tsp. cayenne pepper
  • 3/4 tsp. red pepper flakes
  • 1/2 tsp. ground ginger
  • 1/2 tsp. coriander
  • 5 cups chicken broth
  • 1/3 cup white rice
  • 1/3 cup tomato paste
  • 1 1/2 cups diced canned tomatoes
  • 1 can coconut milk
  • 1/2 cup chunky peanut butter
  • 3 Tbsp. chopped peanuts

Preparation

Step 1

In a soup pot gently saute the onion in the sesame oil until soft. Add the garlic and cook for 2 minutes. Add the spices and the rice and cook, stirring often, for about 5 minutes to release the flavor from the spices. Add the cooked chicken, the broth, tomatoes and tomato paste; cook at a low boil, stirring occasionally, until the rice is just tender.
