Ricotta Cloud (Italian Mousse)-Pascale

This dessert is light and fluffy and delicioso

Ingredients

  • 1 pound of ricotta cheese
  • 2 teaspoons vanilla
  • sugar to taste
  • 1/2 pint of heavy cream (may need more)
  • Blackberries, blueberries, raspberries

Preparation

Step 1

Whip cream until fluffy. Add sugar to taste. Then fold in ricotta and vanilla.

Layer with fruit, then mousse, fruit, mousse

Refrigerate until ready to serve.

Note: Can use preserves as a topping. Stir in a little hot water to preserves to loosen them up. Drizzle over the mousse and serve.
