Chicken Fajita Tacos

Ingredients

  • 2 tbsp. vegetable oil
  • 1 1/2 lbs. boneless skinless chicken breasts, cut into 1/4 inch thick slices
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 (1 oz. ) package taco seasoning mix
  • Taco size flour tortillas
  • Guacamole, sour cream, chopped tomatoes, shredded cheese
  • Garnish: chopped fresh cilantro

Preparation

Step 1

In a large skillet, heat vegetable oil over medium-high heat. Add chicken, onion, pepper, and taco seasoning mix; cook, uncovered 4 minutes, stirring frequently. Cover, and cook 8 minutes, or until chicken is done and vegetables are tender. Serve with tortillas, guacamole, sour cream, tomatoes, and cheese. Garnish with cilantro, if desired.
