Ingredients
- 1 1/2 cups dried mixed fruit bits
- 1/2 cup butter
- 1 medium onion, chopped
- 1 cup chopped celery
- 5 cups cornbread crumbs
- 2 cups white bread crumbs
- 1 1/2 cups vegetable broth
- 1 1/2 tsp rubbed sage
- 1 tsp poultry seasoning
- 1 tsp salt
- 1/2 tsp freshly ground pepper
- 1 egg, lightly beaten
Preparation
Step 1
Place fruit in a bowl and add water to bowl to cover fruit. Cover and allow fruit to sit at room temperature overnight.
Preheat oven to 350 F. Melt butter in skillet. Add onion and celery and saute until onion is transparent. Remove from heat and set aside.
Drain fruit. In a large mixing bowl, combine fruit, sauteed mixture, all bread crumbs, and vegetable broth. Add sage, poultry seasoning, salt, and pepper, adjusting seasoning as desired. Stir in egg.
Place stuffing in a lightly greased 2-quart baking dish. Cover with aluminum foil and bake 25 to 30 minutes or until stuffing is heated through.
