Ingredients
- 10 oz. flour
- 3 oz. sugar
- 1 tbs. baking powder
- ½ tsp. salt
- 2 eggs, beaten
- 8 oz. buttermilk
- 1 tsp. lemon zest
- 4 tbs. butter, melted and cooled
- 4 oz. blueberries, dried well and tossed with flour
Preparation
Step 1
Mix flour, baking powder, baking soda, and salt. Beat together the eggs, buttermilk, zest, and butter. Stir in buttermilk lightly, mix should remain lumpy. Fold the blueberries into the batter and spoon into muffin tins.
