Gooey Chocolate-Caramel Fantasy

This lucious dessert from Kavanaugh's Resort and Restaurant near Brainrd Minnesota, is a chocolate lover's dream come true. The treat includes a chocolate crumb crust and caramel-pecan filling crowned with melted chocolate "It's just a beg candy mar on a plate" Chef Tom Kavanaugh says "and you don't even have to unwrap it".

Ingredients

  • 2 c. chocolate wafer crumbs (about 38 wafers)
  • 1/3 c. butter, melted
  • 30 vanilla caramels
  • 1/2 c. caramel ice cream topping
  • 1/4 c. whipping cream
  • 2 c. chopped pecans
  • 3/4 c. semisweet chocolate pieces
  • 1/4 c. wipping cream

Preparation

Step 1

In a medium mixing bowl, stir together chocolate wafer crumbs and melted butter. Press onto the bottom of a 9 inch springform pan. Bake ina 350 oven for 10 minutes. Cool slightly on a wire rack.

In a heavy medium saucepan, melt caramels in caramel ice cream topping over low heat, stirrin goften. Stir in the first 1/4 c. whipping cream. Remove from heat; stir in nuts. Spread over crust. Cool, cover and chill for 1 hour.

For topping: In a heavy small saucepan, melet chocolate. Remove from ehat; stir in reamaing whipping cream. drizzle or spread over caramel-pecan mixture. cover and chill for at least 1 hour.
