Zuccini Onion Pizza

  • 2 lbs grated zucchini
  • 3/4 tsp salt
  • 1 onion finely chopped
  • 1 tbs EVOO
  • Pepper
  • 1/2 grated parmigiano reggiano cheese
  • 1/2 cup grated asiago cheese
  • 1 lb Prepared pizza dough



Step 1

1. Position an inverted baking sheet or pizza pan in the lower third of the oven and preheat to 450 degrees. Toss grated zucchini with salt in a colander. Let stand for 20min. then squeeze dry. In a large skillet, cook the zucchini and onion in EVOO about 7 min; transfer to a large bowl, season with pepper and freeze for 15 min. Stir in cheeses.

2. Divide pizza dough into two. On a parchment lined rimless or inverted baking sheet stretch out 1 piece of dough to a 12in round. Brush with olive oil. Sprinkle half of zucchini mixture on top, leaving a 1/2 in border, and slide onto the hot baking sheet. Bake until golden brown about 12-15 min. Repeat with the remaining ingredients to make a second pizza
