Ingredients
- ¾ cup corn meal
- 1½ cups milk
- 1 egg, beaten
- 1pound ground beef
- 1 package chili seasoning mix (Lawry’s)
- 2 teaspoons seasoned salt
- 1 can 16oz tomatoes
- 1 can corn, drained
- 1 can large black olives, drained
- 1 can small green chiles
- 1 cup cheddar cheese, shredded*
Preparation
Step 1
Mix first three ingredients together and set aside. Brown meat and drain. Add next ingredients except cheese and corn meal mixture. Mix and then add the corn meal mixture and bake at 350 degrees for 1 hour and 15 mins. Sprinkle top with cheese and bake another 15 minutes.
*When I make this I quite often use Jack cheese and cut it into slender fingers which I lay on top of the casserole in a spoke fashion and then put more olives inbetween the spokes...makes for an interesting presentation.
