CHICKEN PIE (Paul Martin)

Ingredients

  • 1 recipe of crust
  • 2 cups of bechamelle
  • 1 egg beaten
  • 2 cups of cooked chicken
  • ½ lb. of mushroom sliced
  • 2 green onions minced
  • 1 teaspoon of paprika
  • 1 tablespoon of olive oil
  • salt and pepper
  • ½ cup of cheese (cheddar, mozzarella and parmesan)

Preparation

Step 1

1. Roll dough and cover a quiche pan.
2. Prick with a fork and brush with egg.
3. Cook for about 30 minutes.
4. Heat olive oil and cook mushrooms for 3 minutes.
5. Add salt, pepper, paprika and chicken and cook 2 minutes.
6. Add bechamelle and mix well.
Pour over the crust, sprinkle with cheese and bake at 400 for 15 minutes
