CHOCOLATE FUDGE

Ingredients

  • 1/3 c. + 2 Tbs. Cocoa
  • 4 1/2 c. sugar
  • 1/8 tsp. salt
  • 2 1/4 c. evaporated milk
  • 1/4 c. + 2 Tbs. butter
  • 1 1/2 tsp. vanilla

Preparation

Step 1

Mix cocoa, sugar, and salt in a large heavy pan; add milk; stir till ingredients are moistened. Bring to boil over fairly high heat, stirring constantly. Boil, stirring occasionally till fudge reaches 236° (soft-ball stage).
Take off heat and drop in butter. DON’T STIR. Cool to 110°. When fudge has cooled, add vanilla and beat till it loses some of its gloss and thickens.
Spread in lightly buttered pan. Cool; cut in squares.
