Ingredients
- Marinade:
- 4 12oz pork tenderloins
- 1/2 cup fresh orange juice
- 1/4 cup fresh lime juice
- 1/2 cup dark rum
- 1 medium onion, thinly sliced
- 6 garlic cloves minced (1 1/2 tsp)
- 2 tsp oregano
- 2 tsp ground cumin
- 1 tsp salt
- 1 whole bay leaf
- 1/2 tsp groound black pepper
- Fresh Fruit Salsa:
- 1 small red onion, chopped
- 1/4 cup fresh lime juice
- 1 1/2 cup peeled, chopped pineapple, mango or peach
- 1 small red pepper chopped
- 1/4 cup cilantro chopped
- 1 garlic clove minced (1/4 tsp)
- 1/4 cup fresh orange juice
- 1 jalapeno pepper seeded and finely chopped
- 1/2 tsp ground chipotle pepper
- 1/8-1/4tsp salt to taste
- 1/4-1/2 tsp ground pepper
Preparation
Step 1
Rinse the tenderloins and pat dry. Combine the marinade ingredients and coat tenderloins. Marinade overnight in the refrigerator for 8 hours.
Grill 8-10 minutes per side or to a temperature of 155 degrees. Let rest 5-10 minutes. Slice and serve with salsa.
If unable to gril, sear the tenderloins and bake in a 425 degree oven for 15-20 minutes.
Combine salsa ingredients and refrigerate for at least one hour.
