PUMPKIN SOUP

  • 2 T unsalted butter
  • 3 T chopped onion
  • 2 T flour
  • 6 C chicken broth
  • 1 (15 oz) can pumpkin (unsweetened)
  • 1 (8 oz) jar applesauce
  • 1 t salt
  • 1/2 t ground ginger
  • 1/4 t nutmeg
  • 1 C heavy cream
  • Ground pepper to taste
  • Croutons

Preparation

Step 1

Heat the butter in a large saucepan and saute the onions over medium heat for 3-4 minutes until softened. Sprinkle with flour over the onions and stir until mixed. Add the chicken broth and pumpkin; stir until smooth. Add the remaining ingredients; except the cream, pepper and croutons. Stir well, cover and simmer gently for about 20 minutes until hot and the flavors have blended. Stir in the cream and heat until hot. Garnish with freshly ground pepper and serve immediately with crisp croutons.
