Pepperjack Chicken Pasta

Ingredients

  • 3 C. uncooked mostaccioli
  • 1/4 ¼ C. chopped onion
  • 1/4 ¼ C. chopped red pepper
  • 1/2 ½ tsp. minced garlic
  • 1 T. oil
  • 1 bag condensed southwest chicken strips
  • 3/4 ¾ C. water
  • 1 can 15 oz. black beans, rinsed
  • 1/4 ¼ C. shredded Monterey jack cheese, or pepper jack cheese

Preparation

Step 1

Cook pasta. Saute onion, pepper, and garlic in oil until tender. Stir in soup, chicken and water. Bring to boil. Reduce heat, cover and simmer 8 minutes. Stir in beans heat through. Serve over the top of cooked pasta with shredded cheese.
