Ingredients
- 1 1/4 cups Chicken Broth
- 3 tbsp Lime juice
- 2 tbsp Soy sauce
- 1 tbsp finely grated ginger root
- 1 tbsp grated lime zest
- 1 clove garlic minced
- 1/4 tsp pepper
- 4 boneless, skinless chicken breast halves
- 1/4 cup Brown sugar packed
- 2 tbsp peanut butter
- 1 tbsp Sweet chili sauce
- 1/2 cup coconut milk
- 2 tsp cornstarch

Step 1
Combine first 7 ingredients in medium frying pan. Bring to a boil. Reduce heat to medium.
Add chicken. Cook, covered, for 12 to 15 minutes, turning at halftime, until chicken is no longer pink inside. Transfer Chicken to serving plate. Cover to keep warm.
Wisk next 3 ingredients into broth mixture until smooth. Bring to a boil.
Stir coconut milk into cornstarch in small cup. Slowly add to broth mixture, stirring constantly with whisk, until boiling and slightly thickened. Serve with chicken.
Garnish with lime zest.
