Yummy Cold Carrot Salad

This salad is an absolute delight for carrot lovers. It's great for a large crowd and should be prepared a day in advance to allow all flavors to blend.

Ingredients

  • 2 lbs carrots
  • 1 green pepper
  • 1 medium sweet onion
  • 1/4 cup oil
  • 1/2 cup vinegar
  • 1/2 cup sugar
  • 1 teaspoon prepared mustard
  • 1 tablespoon soy sauce
  • 1 can condensed tomato soup

Preparation

Step 1

Slice and cook carrots until tender, drain and cool. Combine cooled carrots, sliced green pepper and sweet onion that has been sliced (the thinner the better).

In a separate bowl, combine the remaining ingredients. Mix well and pour over the vegetables. Serve cold.

This salad is best when prepared a day in advance.
