  • 2 1/2 lbs. chicken pieces
  • 1 C. salsa
  • 1/4 C. peanut butter
  • 2T. lime juice
  • 1T. soy sauce
  • 1 tsp. fresh, minced ginger
  • 1/2 C. chopped peanuts
  • 2T. chopped, fresh cilantro


Servings 6
Preparation time 5mins
Cooking time 8mins


Step 1

1) place chicken in slow cooker. mix together salsa, peanut butter, lime juice, soy sauce and ginger; pour over chicken

2) cover; cook low 8-9 hours or high 3-4 hours.

3) to serve: pour sauce over chicken and sprinkle with peanuts and cilantro
