LASAGNA

Ingredients
- 1 lb italian sausage
- 1/2 lb ground beef
- 1/2 C chopped onion
- 2 cloves garlic, crushed
- 2 T sugar
- 1 T salt
- 1 1/2 t basil
- 1/2 t fennel seed
- 1/4 t pepper
- 1/4 C parsley
- 4 C canned tomatoes
- 2 (6oz) cans tomato paste
- 12 lasagna noodles
- 1 container ricotta cheese (15 oz)
- 1 egg
- 3 oz parmesan cheese
- 1/2 t salt
- 3/4 lb mozzarella, sliced

Step 1
Saute sausage and beef, onion and garlic until brown. Add sugar, 1 T salt, basil, fennel, pepper and 1/2 of parsley. Add tomatoes, paste and 1/2 C warm water, mashing tomatoes. Bring to boil, simmer covered 1 1/2 hours.
Boil 3 quarters water with salt. Add noodles 2-3 at a time and boil 10 minutes. Drain and rinse in cold water. Dry.
Preheat oven to 375 degrees. Combine ricotta, egg, remaining parsley and salt.
In 13" x 9" x 2" pan spoon 1 1/2 c sauce, layer with 6 noodles, spread 1/2 of ricotta mixture and top with mozzarella. Spoon 1 1/2 C sauce and sprinkle with parmesan cheese. Repeat layering starting with 6 noodles and ending with 1 1/2 C sauce ,sprinkle with parmesan. Spread with remaining sauce and top with cheese. Cover with foil, tucking around edge.
Bake 25 minutes; remove foil, bake uncovered 25 minutes longer or until bubbly. Cool 15 minutes before serving.
