in pan heat on medium 2 c heavy cream, 2 c half and half and 1 vanilla bean halved and scraped. Heat to simmer, lower heat and simmer 10-15 minutes, after that remove bean and remove from heat to cool. Then wisk 8 egg yolks with ½ c superfine sugar and ½ tsp kosher salt. After that slowly add cream in slow steam whisking constantly. When done then add mixture to 8 (six ounce) ramekins and put in a roasting pan and add boiling water half way up the ramekins and cook in a water bath at preheated 325 oven for 40-45 minutes. When dones remove and transfer to refidgerator and chill, oncovered at least two hours and up to one day. 30 minutes before adding topping remove from fridge and add 1 tsp superfine sugar and cook with kitchen torch or put in oven with broiler on for 3-5 minutes. We tried this on 12/27/09 and it was very good. Only in fridge for 2 hours and did not set well enough. Also, put sugar on top and broiler and it did not work very well for even carmilization. But still good and topped with strawberries.
