Stuffed Green Pepper Soup

  • 1/2 lb ground round /chuck
  • 2 cups chopped green bell pepper (I have made it with one large pepper and that is fine)
  • 1 cup chopped onion
  • 1/4 tsp black pepper
  • 1 (14 oz) can beef broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 (10 3/4 oz) can of tomato soup, undiluted
  • 1 1/2 cup hot cooked white rice

Directions:

Cook ands crumble beef and add onion and green pepper and cook until tender. Add remaining ingredients except for the rice. Bring to a boil, reduce heat and simmer for at least 45 minutes. Spoon 1/4 cup hot cooked rice into each of 6 bowls; top with 1 cup of soup.
