Nuts - Seasoned Pepitas and Peanuts

Ingredients

  • 2 Tbsp. butter, melted
  • 1 Tbsp. packed brown sugar
  • 1 1/2 tea. chili powder
  • 1 tea. dried Mexican oregano, crushed
  • 1/2 tea. salt
  • 1/2 tea. cumin
  • 1/2 tea. ground coriander
  • 1 cup pumpkin seeds
  • 1 cup raw peanuts or spanish peanuts

Preparation

Step 1

Preheat oven to350 degrees.

In a small bowl, stir together melted butter, brown sugar, chili powder, oregano, salt, cumin and coriander. Spread pumpkin seeds and peanuts on a 15x10x1" baking sheet. Drizzle with butter mixture. Toss to coat.

Bake for 10-12 minutes or until lightly toasted and golden, stirring once halfway through baking. Cook compltely before serving.

Makes about 2 cups.
