Grilled Zucchini Rolls

Ingredients

  • 1 1/2 1 ½ lbs. fresh ricotta
  • Zest of 2 lemons, finely chopped
  • Pinch of red pepper flakes
  • 2 1/2 2 ½ tbs. olive oil
  • Salt and pepper
  • 2 large zucchini

Preparation

Step 1

Mix the ricotta with zest, pepper, salt, red pepper, and oil. Mix well. Make 12 thin, lengthwise slices of zucchini, about 1/8 inch thick. Brush lightly with oil and grill until soft and grill-marked. Cool.

Lay the zucchini on a flat surface, add 1 tbs. ricotta to one end of the strip and roll.
