SAUSAGE AND EGG CASSEROLE

Ingredients

  • 1 lb. sausage
  • 1/2 lb. grated sharp Cheddar
  • 1/2 tsp. dry mustard
  • 1/2 tsp. paprika
  • 1 tsp. salt
  • 1 c. sour cream
  • 10-16 eggs (depending on crowd)

Preparation

Step 1

Heat oven to 325º. Cook and drain sausage. Spray a 2 or 3 qt. baking dish. Put 1/2 of cheese on bottom of dish. Mix spices with sour cream and mix with sausage. Spread over grated cheese. (This much can be done ahead.)
Beat eggs and pour over sausage mixture. Sprinkle remaining cheese on top. Bake 25-30 minutes or until eggs are set.
