Broccoli Potato Soup

The lime juice is what makes this such a good soup. May even want to put a little more in.

Ingredients
- 1 can (14 1/2 oz) lower salt chicken broth
- 1 1/2 cups water
- 5 cups peeled, thickly sliced broccoli stalks
- 1 medium sized potato (6 ounces) peeled and quartered
- 1 medium-size onion, quartered
- 1/4 tsp pepper
- 1/2 cup sour cream
- 2 Tbsp chopped dill
- 1 Tbsp lime juice
- 1/2 tsp salt
Preparation
Step 1
Combine chicken broth, 1 1/4 cup water, broccoli stalks, potato, onion and pepper in saucepan. Cover and boil gently 15-20 minutes until potatoes are tender. Cool slightly. Puree in blender or processor with liquid. Return to pan.
Stir together sour cream and remaining 1/4 cup water until smooth. Stir into saucepan with dill, lime juice and salt. Heat to serving temperature.
Note: This is also good NOT processed, and without the sour cream, e.g., a chunkier broth type soup. In that case, broccoli and potatoes should be cut into smaller pieces.
