SCRAMBLED*****Scrambled Eggs "Magda" on Fried Bread - 10 Points

Ingredients

  • BREAD:
  • 2 slices of wonder bread, crusts removed and cut in half on the diagonal
  • 1 about 1 tbsp. avocado oil (originally called for clarified butter)
  • EGG:
  • 1/2 tbsp. butter or becel
  • 1 egg
  • 1 tsp. heavy cream
  • Malden salt and freshly ground pepper
  • 1/2 - 1 tsp. dijon mustard
  • 1 tbsp. each frozen parsley and dill
  • 1 tbsp. snipped chives, if available
  • 1 - 2 tbsp. finely shredded minced gruyere cheese (I used Compte) 1/2 ounce

Preparation

Step 1

* *Heat* the oil in a frying pan over medium heat until hot and *fry* the bread on both sides, in batches if necessary, until golden and crispy.

* *Remove* the bread to a serving plate and place attractively, overlapping slightly, Let frying pan *cool* slightly before continuing with recipe. (This is important, as the pan will be very hot from cooking the bread - first time, I had to throw away the first pat of butter for cooking the egg and then wash the pan, because the butter scorched)

* Whisk the egg in a bowl or measuring cup and *add* cream, mustard and herbs and season to taste and mix well.

* *Melt* the butter or becel in the pan and add in the egg. *Stir* gently with a rubber spatula until desired consistency (keep them soft but not runny), adding the cheese about halfway through.

* *Spoon the egg down the middle of the fried bread and serve.
