Ingredients

  • 2 2/3 cup flour
  • 1/2 cup packed brown sugar
  • 1 tsp chai spice blend
  • 2 Tbsp + 1 cup buttermilk
  • 4 Tbsp butter, melted
  • 1 cup sugar
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 3 egg whites
  • 1 cont (6oz) blueberries

Preparation

Step 1

Preheat oven to 375. Combine 2/3 cup flour, brown sugar, and 1/4 tsp chai spice. Stir in 2 Tbsp buttermilk and 2 Tbsp butter until crumbs form. reserve. In separate bowl, combine remaining 2 cups flour and 3/4 tsp chai spice with sugar, baking powder, soda, and salt. Stir in egg whites and remaining 1 cup buttermilk and 2 Tbsp butter until well blended. Stir in blueberries. Pour into pan and cover with crumble. Bake 20-25 min or until toothpick clean.

If desired, sprinkle with confectioners sugar or for glaze, whisk together 3/4 cup confectioners sugar and 1 tbsp water, drizzle over muffins.
