Cheesy Chicken and Rice Casserole

This is an easy to make recipe that is really delicious! I make it healthy by using brown rice and going easy on the cheese.

Ingredients
- 1 lb (3) Chicken Breasts - Boneless, Skinless
- 1 can (10.75 oz) Campbell's Condensed Cream of Chicken Soup
- 1 1/3 cups Water
- 3/4 cups uncooked Brown Rice
- 2 cups Frozen Vegetables (thawed)
- 1/2 tsp. Onion Powder
- Shredded Cheese (add as much as desired)

Step 1
In a mixing bowl, combine soup, water, rice, vegetables (if frozen, thaw first) and onion powder. Stir until mixed well and pour into a shallow baking dish.
Season chicken as desired and place on top of mixture.
Cover and bake at 375 for 45-60 minutes or until done.
Remove from oven, remove cover and top with cheese. Put back in oven for about 5 minutes to allow cheese to melt.
Cool and serve!
