  • 1 C mashed potatoes
  • 2 egg yolks
  • 1/8 tsp nutmeg
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/2 C parm cheese
  • 1/2 C flour
  • 1/2 tomato sauce

Step 1

Mix potatoes, yolks, seasoning, flour and half the cheese. On a floured surface, roll into 1 1/2in tubes and cut them into 1 1/2in long segments. Put these in boiling water . When the float to the top, cook an additional 2-3 min. Toss with hot tomato sauce, top with remaining cheese.
