CHOCOLATE PIE (Paul Martin)

Ingredients

  • 5 eggs (separated)
  • 8 ounces of sugar
  • 4 ounces of soft butter
  • 4 ounces of semisweet chocolate finely grated
  • 4 ounces of flour

Preparation

Step 1

1. Preheat oven to 320.
2. Mix yellows and sugar in a stainless bowl.
3. Beat with a mixer 2-3 minutes until creamy.
4. Incorporate chocolate and butter and mix 1-2 minutes.
5. Gradually sprinkle in flour mixing with a spatula.
6. Beat whites until firm and fold in chocolate mixture.
7. Pour in a spring 8 mold buttered and floured.
8. Bake for 40-45 minutes.
9. Serve with Devon shire cream or 35% whipping cream
