Summer BLT Spread

Ingredients

  • 6 slices cooked crumbled bacon or 3 oz. pkg. of real bacon bits
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 3 plum tomatoes, seeded and chopped (1 cup)
  • Lettuce leaves
  • Minced fresh parsley
  • Pepperidge Farms butter crackers

Preparation

Step 1

Reserve 1 teaspoon bacon for garnish. Combine remaining bacon, sour cream, mayonnaise and plum tomatoes in a medium bow, stirring until blended. Cover, refrigerate for at least one hour to blend. To serve, spoon into a small bowl or hollowed out tomato. Plate on lettuce leaves on serving plate surrounded by the butter crackers. Sprinkle reserved bacon and parsley over the spread.

Hint:
I actually make this a day ahead but do not add the chopped tomatoes to the spread until a couple of hours before serving. I also add double the amount of tomatoes which enhances the flavor tremendously.
