Stuffing for Cornish Hens - Mother

Ingredients

  • ½ cup white raisins
  • ¼ cup cognac
  • 6 tsp. butter
  • ¼ cup chopped shallots
  • ½ T. salt
  • 1½ cups cooked white rice (or brown rice if you wish)
  • ¼ chopped pistachios

Preparation

Step 1

Soak raisins in cognac for 10 or 15 minutes and then sauté them in the butter. Add the shallots and combine with the salt, cooked rice and pistachios.
