Chicago Bob’s Crockpot Chicken with Black Beans

Ingredients
- 3 – 4 frozen boneless chicken breasts (do not thaw) I use Tyson breast halves. They come in a re-sealable freezer bag.
- 15 1/2 oz can black beans drained and rinsed
- 15 oz frozen corn
- 24 oz jar of salsa – any kind (I like Private Selection’s restaurant style)
- 1/2 tsp cumin powder
- 1/2 tsp garlic powder
- 1/4 tsp cayenne pepper
- 8 oz cream cheese
- Four or more servings of white rice.

Preparation
Step 1
Place frozen chicken in crock pot
Add black beans, corn, salsa and spices.
Cook 9-1/2 hours on 10 hour setting.
When time is up, remove lid from pot and use large fork or spoon to (easily) break chicken apart, place 8oz block of cream cheese on top of mixture and replace crock pot lid, cook 30 min.
Serve over rice.
Leftovers can be used to make burritos
