SALMON WITH RIVERS INLET CLASSIC MARINADE

Ingredients

  • 2 pounds salmon
  • 6 cloves garlic, crushed
  • 1 tablespoon ginger
  • 1 cup soy sauce
  • 1/4 cup olive oil
  • 1/2 cup brown sugar
  • 1 lemon
  • Fresh ground pepper, to taste
  • 2 ounces Canadian rye whiskey
  • Splash Tabasco hot sauce

Preparation

Step 1

Remove bones from fish, cut into serving-sized pieces. Leave skin on.

Marinate the fillets for at least 20 minutes. In large bowl, stirring occasionally, mixing ingredients.

Don’t leave fish marinating more than 1 hour as the marinade flavor can overpower the delicate flavor of the salmon.

Place salmon, skin side down, on hot BBQ, turn heat to low and cover. Cook until the salmon is done almost completely through, but still slightly pink in the middle. This is usually about 10 minutes per inch. Do not overcook!!
