BLUEBERRY-LEMON MUFFINS

Ingredients

  • 1 3/4 c. flour
  • 1/4 c. sugar
  • 2 1/2 tsp. baking powder
  • 3/4 tsp. salt
  • 1 well-beaten egg
  • 3/4 c. milk
  • 1/3 c. cooking oil
  • 1 c. fresh or frozen blueberries (thawed and drained)
  • 2 Tbs. sugar
  • 1 tsp. grated lemon peel

Preparation

Step 1

Stir together first 4 ingredients; make a well in center. Combine egg, milk, and oil; add to dry mixture and stir just till moistened. Fold in blueberries, 2 Tbs. Sugar, and lemon peel. Fill paper-lined muffin pans 2/3 full. Bake at 400 for 20-25 minutes. While muffins are warm, dip tops in melted margarine and then in sugar. Makes 12 muffins.
