Beef and Potato Burritos

Ingredients

  • 1-1.5 lbs beef steak, cubed
  • 3-4 medium potatoes, washed, peeled, and cubed
  • 1.5-2 cups shredded cheddar cheese
  • 2 large eggs, beaten
  • 10-11 burrito size flour tortillas
  • 1 burrito or fajita seasoning packet
  • onion powder, to taste
  • garlic powder, to taste
  • seasoning salt, to taste
  • cracked black pepper, to taste

Preparation

Step 1

1. Place beef in a large resealable plastic bag. Add seasoning packet, close the bag and shake to coat. Place in refrigerator for 1-2 hours.

2. Heat 2 Tbsp oil in a pan over medium heat. Sautee potatoes until lightly browned. Season with seasoning salt, pepper, onion powder, and garlic powder.

3. Meanwhile, remove meat from the refrigerator. Heat 1 Tbsp oil in a large skillet over medium-high heat and sautee meat until browned. Wrap tortillas in foil and bake them 10 minutes.

4. Add potatoes to the beef. Add shredded cheese and eggs. Mix well and cook over medium-low heat until the eggs are cooked, stirring frequently.

5. Fill each tortilla with 4-5 Tbsp of this mixture. Fold up burrito style and place in a large baking pan sprayed with cooking spray. You may cover one layer of burritoes with foil and start a new layer. Cover the whole pan with foil and bake 10-15 minutes, until heated through.
