Scalloped Potatoes & Bacon

Ingredients
- 4-5 large potatoes
- 1 Tsp Salt
- 1 large onion, thinly sliced
- 1/2 cup green pepper, diced
- 3 Tbl butter
- 1/3 cup flour
- 3 1/2 cups milk
- 1 1/2 cups shredded cheese
- 3/4 tsp seasoned or plain salt
- 1/8 tsp black pepper
- light sprinkling of granulated garlic salt
- 4-6 slices smoked cooked bacon
- 1/2 cup canned crispy onion bits

Preparation
Step 1
microwave bacon until 1/2 cooked, Cut into bite sized pieces
Wash & peel potatoes, Cut into 1/2 inch slices
Bring a saucepan of water to a boil, add 1 tsp salt to water
Add sliced potatoes, pepper and onion
Cook 1 minute in boiling water
In saucepan melt butter. Using whisk, stir in flour and milk, mixing until smooth. Cook over low heat, stirring constantly. Add cheese and continue to stir. Stir in 3/4 teaspoons salt and 1/8 tsp pepper, Mix in bacon,
Transfer to buttered 2 quart casserole. Sprinkle top with granulated garlic.
Bake in preheated 350 deg. oven, uncovered for 40 minutes. Sprinkle with crispy onions and bake another 4-5 minutes.
