Ingredients

  • 16 Tablespoons (2 sticks) salted butter, softened
  • 2/3 cup sugar
  • 2 large egg yolks
  • 1 teaspoon vanilla extract
  • 1 teaspoon whiskey
  • 2 1/4 cups all purpose flour
  • 1 ounce unsweetened choclate, chopped
  • 1/4 cup water
  • 2 cups confectioners sugar

Step 1

1. Adjust oven rack to middle position and heat oven to 350 degrees. Line 2 baking sheets with parchment paper. With eletric mixer at medium speed, beat butter and sugar together until light and fluffy, 2 minutes. Add yolks, vanilla, and whiskey and beat until incorporated. Reduce speed to ow , add flour and mix just until combined.

2. Roll half of dough into 3/4 inch balls and space 1 inch apart on prepared baking sheet. Bake until lightly browned around edges, 10 to 12 minutes. Cool 5 minutes, then transfer to wire rack and cool completely. repeat with remaining dough and second baking sheet.

3. Combine chocolate and water in small saucepan and stir over low heat until smooth, about 5 minutes. Off heat, whisk in confectioners sugar until smith, then let cool until thickened to spreadable consistency, about 15 minutes. Spread 1 teaspoon filling onto half of cookies, then top with remaining cookies. Let filling set until firm, about 20 minutes.
