Ingredients
- 1 chopped yellow squash
- 2 grated carrots
- 1 bunch chopped scallions
- 1 small can chopped mushrooms
- 1/2 bag chopped spinach (partially cooked and squeezed)
- chopped garlic to taste
- plain and seasoned bread crumbs
- salt and pepper
- 1 carton egg beaters
- Parmesan cheese to taste

Combine all ingredients and make into patties
brish olive oil on both sides
Bake in 400 degree oven
