Ingredients
- 2 diced onions
- 3 diced carrots
- 3 diced celery sticks
- 250 g potatoes
- 2 zucchini
- 90 g green beans
- 250 g cabbage
- 1/2 cup oil
- 45 g butter
- 1.25 ltrs beef stock
- 2 x400g can tomatoes
- 310 g cannellini beans
- salt,pepper

Preparation
Step 1
Chop and dice onions,carrots,celery,potatoes,zucchini,top and tail beans and chop,shred cabbage.
Heat oil and butter and fry onions intil transparent.
Add carrots,potatoes,celery,zucchini,beans and cabbage.
Stir in stock and canned tomatoes.Cover
Bring to boil then simmer 1.5-2 hours.
Last 15mins add cannellini beans.Season with salt and pepper.Add parmesan cheese if desired.
