Ingredients

  • 1 T unsalted butter
  • 2 cups freshly shelled peas
  • 1 clove garlic, chopped
  • 1 T chopped fresh chives
  • 1/2 cup creme fraiche (see note)
  • Salt and freshly gorund pepper
  • Fresh chives for garnish

Preparation

Step 1

Heat butter in a large saute pan over high heat until melted and bubbling. Add peas and saute about 3 minutes. Add garlic, and chives and saute about 1 minute. Add creme fraiche and cook until just heated through. Season to taste with salt and pepper. Transfer to a serving bowl and garnish with fresh chives. Serve warm.

Note: Creme fraiche can be found in dairy or can be made by mixing 2 T sour cream, with 2 cups heavy cream and letting it sit at room temp. for 8 hours or ovenight. Refridgerate until thickened.
