Special Sauce (Rachel's)

If your putting it on a cheeseburger then it goes really well with Munster cheese and sprinkle some fried onions on top its wonderful! Its also pretty good with some grilled chicken. And as a side paring it with some Cilantro lime Shrimp is pretty good also, that recipe is pretty simple as well.

Scoop about four heaping spoonful’s of mayonnaise into a bowl. Chop a small handful of cilantro into a small mince, including the stems. Take about a ½ inch of the ginger and mince with the cilantro. You want about a small spoonful of minced ginger or mince a large clove of garlic. Use about ¼ of a jalapeno and mince to add into the mayo. Mix the Garlic Ginger and Cilantro with the mayo. Cut a lime in half and give a good squeeze into the mayo mixture, you don’t need all the juice just a squeeze. Shake about a ½ tsp. of Cayenne pepper and Chili pepper and mix into the mayo mixture. Sea salt to taste. Take about 4-6 good-sized roasted tomatoes and dice them up pretty well. Mix them into the mayo mixture.
